Why is it that once everthing seems to go fine my fiance always turns around and keeps jammering that she isn't happy?

If she keeps saying that she isn't happy then she probely dosen't want to marry you. I don't know you or her so I could be wrong but, it seems like a pretty good hint. Good luck either way.
